Ο Ευστάθιος Παπαδάκης ήταν Έλληνας πολιτικός.
Βιογραφικά στοιχεία
Γεννήθηκε το 1847 στο Γαλαξείδι και ήταν γιος του Δημητρίου Παπαδάκη. Σπούδασε νομικά στο Πανεπιστήμιο Αθηνών και ιδιώτευσε ως δικηγόρος στο Γαλαξείδι και εν συνεχεία στην Αθήνα. Εξελέγη βουλευτής Παρνασσίδος στις εκλογές του 1892.
